Serves 10 guests
To make the Clementine Cordial (yields 750ml)
300ml newly squeezed clementine juice
200ml fresh lemon juice
500g granulated sugar
Ingredients for the Drink (yields 850ml, enough for 10)
400ml decent vodka
100ml London dry gin
150ml peach liqueur
200ml citrus syrup (see above)
A few cranberries, for garnish
Mandarin essential oil, for finishing
Directions
Making the Cordial: Put the listed components in a pan, bring to a simmer, mixing until the sugar dissolves. Next, turn off the burner and leave to cool down entirely. Transfer to a sealable bottle, seal and store chilled, it will last for about one month.
To make Cocktail Base: Combine the specified spirits and syrup into a sizeable container, allow it to infuse for one hour, then filter it best through cheesecloth, making it completely strained.
For serving: Measure 85ml from the premix into a cocktail shaker filled with ice, gently stirring lightly for about 60 seconds to cool it down. Strain into an frosted cocktail glass or a similar vessel, top with a few cranberries and finish with a quick spritz of the essential oil over the top.
